Every other weekend this house is chaos for three solid days/nights - well four I guess, bc Mondays too. I best describe it as living in a frat house full of kids. It is a mess, full of food, full of laundry, (most of which smells like the zoo), tons of driving, tons of yelling andddddd the best part - tons of laughing. The husband and I categorize our life as kid and kid free. And the kid weekends are the frat weekends. They are also the extra-large grocery weekends - holy shit can teen/preteens eat a lot.
Now don't get me wrong, kid free is wonderful and I love it. I love time with the husband - alone. I love to catch up on laundry, watch whatever I want on tv, not getting interrupted five separate times in an evening to get ice cream for a kid, read a book and go on a date. But after about one and a half kid free days, both me and the husband cannot wait for the noise, the fighting, the constant door being left open...all of it. Cause kid (not kid free) is really what we live for.
Kid day mealtimes...I don't really know how to describe it other than it is like having Thanksgiving dinner - for every meal. Ok, well minus the turkey, but the amount of food is what I am getting at - a lot of f'ing food. And breakfast tends to be the most difficult and the time I most wanna punch someone in the face. The smallest of the two smalls suddenly, out of the blue, doesn't eat pork, which really means no bacon or sausage or ham...said kid also doesn't like eggs, and has become the worst and most annoying eater in the house. The other small doesn't like eggs or fruit of any kind - I can threaten her into a banana, but it takes like an hour to get it down her - which is not always feasible on a busy morning. The husband only likes eggs, and the two middles eat enough for six people of anything i put in front of them.
And well, all kids like pancakes, all five of mine for sure, but I don't have the time, pans or energy to stand there and make enough pancakes for five kids, plus the eggs my husband can't seem to live without. So, I saw this idea for a sheet pan pancake on facebook one time - so I stole the idea for my own use. I may never have mentioned before, but like pinterest, I have way too many recipes saved on facebook that I never try. This seemed ideal for breakfast for my crew...and it was perfection.
Super simple, fluffy, substantial - it baked up much lighter than I had expected. And the best part, i could make half blueberry and half plain or full of bacon or whatever for the non fruit eaters. Bake in a sheet pan and cut into squares and every one is f'ing happy. I put a plate of eggs in front of my husband, he kisses me and we start our weekend off nice and move on to the chaos we so love a bit later in the day. I wouldn't have it any other...cheers to our best kid weekends.
Frat house sheet pan pancakes all with blueberries
Ingredients
- 4 cups flour
- 4 tablespoons sugar
- 1 teaspoon salt
- 2 tablespoon baking powder
- 4 eggs beaten before adding
- One stick of butter melted
- 2 ½ cups of buttermilk
- 2 cups of fresh or frozen blueberries
Instructions
- Preheat the oven to 400 and line a baking sheet (jelly roll, cookie sheets with four sides) with foil and spray foil with cooking spray.
- Whisk together the flour, sugar, salt and baking powder in bowl. In a separate, large bowl, whisk eggs, melted butter and milk. Slowly whisk in the dry mixture until just combined. Pour batter into cookie sheet and top with blueberries (this is the part where you can choose to accommodated everyone...half blueberries, all blueberries, all plain, whatever you want just sprinkle on the top). Bake for about 20-25 minutes until cooked through in the center. Cut into squares and watch your own frat house family wolf it down.

What a clever idea! I have never thought of cooking them that way, but will have to give it a try. Our weekends take us from 4 people up to 11, so any quick and easy idea to provide the hungry family good food is a winner in my book!
