Mummy brownies

Ingredients

For the brownies

  • cups all-­purpose flour
  • ¾ teaspoon baking powder
  • ¼ cup cocoa powder
  • ½ teaspoon salt
  • 6 oz semisweet chocolate
  • 12 tablespoon butter
  • 2 cups sugar
  • 4 eggs
  • 1 tablespoon vanilla extract

For the white icing

  • 1 cups powdered sugar
  • 1 tablespoons butter melted and cooled slightly
  • ¼ teaspoon vanilla extract
  • 1-2 tablespoon heavy cream

Instructions

For the brownies

  • Preheat oven to 350. Line a 8x8 or 9x9 square baking pan with parchment or foil and spray with baking spray. In a bowl mix together flour, baking powder, cocoa powder and salt.
  • Cut butter in to tablespoon-sized pieces and place in a microwave safe bowl. Chop your chocolate (if using a bar) or pour your chocolate chips over the butter. Microwave for 30 seconds at a time, stopping to stir with a spatula until melted completely and combined. Add your vanilla extract.
  • In a larger bowl gently whisk together your eggs. Add the butter, chocolate, sugar mixture to the eggs while whisking, to fully incorporate.
  • Using a spatula, fold in your flour mixture just until combined - do not whisk.
  • Spread the batter into the greased baking pan. Bake for about 30 minutes on the middle rack. Brownies are done when a toothpick inserted in the center comes out with a few crumbs but not a big bunch of wet batter
  • Cool completely and prepare the mummy glaze.

For the icing

  • Combine the powdered sugar, melted butter, vanilla and 1 tablespoon of the heavy cream together. Whisk together until totally blended and smooth. If needed, add the extra tablespoon of cream, a little at a time to thin it out enough to a consistency you are comfortable with to drizzle over the brownies.
  • To mummify these brownies. Take the COMPLETELY cool brownies (if they are not completely cool the icing will melt right into the brownies and you won't see the the white at all), lift the brownies from the pan via the foil/parchment paper. Cut the brownies into the size you want them, but the bars together like one giant brownie.
  • If using a piping bag or a ziploc bag, pour your icing in and cut the teeniest tip off one corner. Drizzle the cining in a back and forth motion over all the bars leaving some brownie visible (you want it to look like a mummy. If you don't have a piping bag or ziploc bag, use a spoon and hold it high over the brownies and drizzle across the bars.
  • Add your eyes to the top nestled on a line of icing to hold them into place.

Notes

These mummy brownies will keep in a container on the counter for up to five days. Do not store in the fridge as the icing will get tamp and melt.
