Hot fudge sauce

Ingredients

  • ½ stick butter
  • 1 ⅓ cups of heavy cream
  • 1 cup light corn syrup (you can also use honey or golden syrup
  • ½ cup brown sugar I prefer dark brown sugar but have had equal success with light
  • ½ cup of good cocoa powder
  • 12 ounces of semisweet or bittersweet chocolate chopped, or use chocolate chips
  • 1 ½ teaspoons vanilla extract
  • 1 teaspoon salt I used sea salt and have used kosher salt before also

Instructions

  • Throw the butter, heavy cream, corn syrup (or alternative), brown sugar and cocoa powder, in a saucepan over medium/low heat. Whisk to combine and continue whisking occasionally until it simmers. Turn down heat to low and simmer for a few minutes. Remove from the heat and whisk in the chocolate until completely melted and incorporated (the sauce will be super luxurious and shiny). Whisk in the vanilla and the salt. Proceed to sealing in mason jars per the link above or store in jar in fridge. Hot fudge sauce thickens when cooled, so to enjoy reheat in a pan or in the microwave.
